If you have never grilled up a batch of sweet and piping hot cinnamon rolls, you are missing out! This popular recipe for Smashed Blackstone Cinnamon Rolls is beyond simple to make and such a tasty treat. You can use packaged cinnamon roll dough and cook these rolls up on your Blackstone griddle.
A few months ago, I started to see these smashed cinnamon rolls popping up on Facebook and TikTok. At first, I didn’t really get the appeal. I mean, they were using packaged, store bought dough and cooking the rolls on a griddle, instead of baking them in the oven. Oh yes, and they were SMASHING then (more like flattening them) on the griddle. Instead of the traditional rolls, they more closely resembled pancakes. (Cinnamon roll pancakes… mmmmmm!)
So I wasn’t overly convinced at their amazingness… and then I TRIED THEM.
It turns out, they are a DELICIOUSLY fun spin on the traditional cinnamon roll. The flat shape makes them easier to eat by hand (I always use a fork to eat traditional cinnamon rolls). The griddle adds a bit of a charred surface which is decidedly full of flavor!
They are so yummy and require almost zero prep time. Add these rolls to your go-to list of griddle desserts or breakfast or anytime snacks.

Smashed Cinnamon Roll Ingredients
To make these rolls, you will need:
- Tube of cinnamon roll dough
- Non-stick cooking spray
- Sprinkles
- Griddle (example shown is a Blackstone griddle)
How to Make Cinnamon Rolls
Follow these simple instructions to make smashed cinnamon rolls on your Blackstone grill:
1. Preheat the griddle on low heat to medium heat.
2. Once the griddle is hot, spray the cooking surface with a non-stick spray.
3. Place each cinnamon roll on the griddle, leaving plenty of space in between each one.
4. Use the griddle spatula to smash down each cinnamon roll. Press down hard to make it flatter, like a pancake. (If your spatula sticks to the roll, you can spray the spatula with cooking spray. You can also use a piece of wax paper or parchment paper between the dough and the spatula.)
5. Cover with dome lid or griddle cover and cook. Cook for several minutes on this side. (Total time for cooking will vary due to the thickness of the cinnamon roll and air around the griddle.) Check the bottom often to make sure they are not burning.
6. When the rolls are browned on the bottom, flip them over.
7. After both sides are browned and the dough is fully cooked, frost the rolls. Smother them with icing and sprinkles.
8. Transfer to a cooling rack and enjoy while they’re still warm.
