I don’t know about you, but when I am writing out my camping meal menu, I always try to keep things easy. Cooking isn’t my favorite past time and when we are camping, I prefer to spend as little time as possible in the camper kitchen. I am always on the lookout for quick and easy meals and dessert ideas. We always travel with our Instant Pot and I have made dozens of Instant Pot RV meals over the years! If we aren’t Instant Potting (is that a verb?), we are probably grilling our dinner, or sometimes even roasting something over the campfire.
When it comes to camping desserts, of course we never leave home without ingredients for plenty of s’mores making. My kids love roasting marshmallows and we have fun using all sorts of different cookies to make delicious s’mores.
Minimal effort that feeds a small crowd
We love these no bake mini pies for a bunch of reasons, but most especially because they are so easy to make AND they are perfectly portioned. The recipe below makes up 5 pies and you can easily double or even triple the recipe to feed more than five if needed. Another nice thing about these mini pies? They can be made up ahead of time! Grab a few minutes in the afternoon to whip up a batch of these pies, stick them it the refrigerator to chill, and you have a scrumptious dessert after dinner.

No Bake Mini Reese's Peanut Butter Cup Pies
- 8 oz whipped topping
- 8 oz cream cheese
- 2 cups peanut butter
- chocolate syrup
- Reese's Snack Mix
- 5 Mini Pie Crusts
- In a large mixing bowl, combine the following ingredients: whipped topping, cream cheese and peanut butter.
- Divide this mixture evenly among the 5 mini pie crusts.
- Drizzle the top of each pie with chocolate syrup.
- Add Reese's Snack Mix to the tops of the pies.
- Chill the pies in the refrigerator until firm (about 30-60 minutes).
- Serve and enjoy!
