These easy waffle iron pepperoni pizza pockets cook up in minutes and they are incredibly tasty. Better yet? Not messy pizza dough required. We used pre-packaged biscuit dough for our pizza “crust!”

RV Meal Planning

I don’t know about you, but before we hit the open road on a new camping adventure, I usually make a camping menu to plan out our meals. I spend the days before we leave town coming up with a menu (usually offering several easy options for breakfasts and lunches and then one meal for dinner each night). Making a menu not only makes grocery shopping easier, but it also prevents us from over-packing food supplies. On trips when we “just wing it” for eating, I end up packing enough food to last a family of 10 for about a month. Food is easy to overpack!

Making a meal plan also helps us cut down on unplanned stops for fast food and other quick eats. This helps the budget and helps our waistlines!

RV Cooking Can Be Super Easy

When we purchased our first camper, I was adamant that we choose a model that included a stove AND an oven in the kitchen. And while they are fine features to have, can I tell you how many times we have used the oven in 6 years of ownership? ZERO.  And how many times have we used that stovetop? Exactly TWICE.

It turns out that our cooking style when we are on the road is different than I had first imagined. I don’t spend long hours slaving over the hot stove when we are in our home away from home. Instead, I turn to our many small appliances that come along with us for quick, easy meals that allow for more time to relax and enjoy time with the fam.

Waffle Irons are Small and Versatile

Among the many small appliances that we swap in and out of our camper for any given trip is a small waffle iron. While waffles for breakfast might be the obvious use of this appliance, don’t overlook the possibilities! Waffles and ice cream for dessert or chicken and waffles for dinner make tasty dishes. You can cook egg omelets in waffle irons, along with any number of “pocket” type sandwiches that you can imagine!

Biscuit dough (the kind that you have to POP open from their tube-shaped package) works wonderfully for a quick sandwich dough. This is a great dough for cooking in a camper because it’s easy to store, easy to work with and there’s no prep (or dirty dishes!) involved.

My kids (okay, my entire family) LOVE pizza pockets! They are super delicious (if you love pizza, you’ll likely love pizza pockets) and cook up quick. Since they are basically a “personal pizza” sized food, you can offer an array of fillings based on individual taste preferences.

Again, the nice thing about this recipe is that you can really customize it based on individual taste preference.

Some popular fillings for pizza pockets:

  • Sauce (marinara is probably the most frequently used sauce, but you can use any sauce that you love!)
  • Cheese (again, traditionally a mozzarella cheese is a popular pick, but you can use whatever your favorite cheese happens to be!)
  • Pepperoni
  • Sausage
  • Bacon
  • Veggies (mushrooms, onions, green peppers, etc)

Easy Waffle Iron Pepperoni Pizza Pockets

Biscuit dough and your favorite toppings are combined to create these delicious, flavorful pizza pockets!

  • waffle iron


  • 1 Can Jumbo Sized Biscuits
  • Shredded Mozzarella Cheese
  • Marinara (Pizza) Sauce
  • Pepperoni
  • non-stick cooking spray


  • Pre-heat waffle iron.
  • Spray waffle iron top and bottom with non-stick cooking spray.
  • Flatten a biscuit slightly and place in on the waffle iron.

  • Top the dough in the center with sauce, mozzarella cheese and pepperoni.

  • Place a second (slightly flattened) biscuit on top and close the waffle iron.

  • Cook for 1.5 - 2 minutes or until the biscuits are fully cooked.

  • Serve and enjoy! Optional: serve with warm pizza sauce on the side for dipping!
