We love our Instant Pot, especially the pressure cooker function. After a long day on the road or exploring the campground and surrounding area, quick and easy dinners are just the ticket. Here are some easy Instant Pot Recipes to Make in Your RV.
We have all been there. You just spent a long day on the road. You drove for hours upon hours to finally arrive at your campground at dinnertime (okay, after dinner by the time you unhitch). You are STARVING and grab the first fast food option that comes your way. Another scenario would be returning back to your camper after a long day of exploring the campground or surrounding area. You are ravenous and while the idea of a hearty, home cooked meal sounds AMAZING, there is no way you are going to cook up something that fast, so it’s another night of burgers and hot dogs on the camping grill.
Easy RV Dinner Ideas
Enter: the Instant Pot. Our Instant Pot earned its spot on our list of things you don’t need in your RV but you’ll be really glad you have. That’s because cooking with one requires the same skill level as using a slow cooker (you literally just toss in a bunch of ingredients) but the pressure cooker function means in under an hour, you are sitting down to a hearty meal.
Our favorite way to use the Instant Pot when traveling is to plan for meals at home (and prep ingredients at home if possible). When we roll into our campground, I will head right into the camper while my husband unhitches from the truck. I get the ingredients loaded and get the IP cooking while we continue to unhitch, level and set up the camper. By the time we are finished setting everything up, dinner that tastes as good as it smells is ready to eat.
So for example, one of our favorite road trip Instant Pot meals is this Instant Pot Pot Roast. Before we leave home, I rinse and cut the veggies and place them in the RV fridge in a gallon Ziploc bag. When I head into the camper to get the meal cooking, it’s literally seconds to dump the veggies, roast, water, and seasoning packet in the cooker. That’s it! Delicious dinner that cooks itself and not only tastes so much better than fast food, but doesn’t leave us with all of that icky grease in our stomachs after a long day of travel and/or exploring!

I love Hobo’s. I am 72 years old and my Mother made these when I was in Elementary school and we had them at least once a week at our house. I have made them with so many different veggies because my children, grandchildren, great grandchildren and even in the daycare wanted theirs to be different.
